This is 100% the fault of the studio execs who don’t want their employees to have a fair wage. I can wait for my Star Trek if it means upholding the ideals that Trek stands for.
Um… you do know that was after his career in the Obsidian Order, right? He was kinda exiled… I mean, I’d love to see a Garak-focused prequel series that also runs until the end of the Dominion War (because you never really ever leave the Obsidian Order), telling some DS9 plot points from his perspective… but I don’t think the whole tailoring thing was ever more than part of a cover he learned as a spy that he turned into a pseudo-career during exile.
Didn’t Alexander Siddig and Andrew Robinson do a screen-read during quarantine of their respective characters as an old, married couple? Or was that something I just imagined? Obviously, not canon, but it’s something that the fan base has certainly gotten behind!

I really would like to see a movie about what happened to Ro Laren between TNG’s “Preemptive Strike” and PIC’s “Imposters”. The story she tells Picard & Riker needs fleshing out. How did she survive the death of the Maquis? How was she captured? What were the circumstances that led her to become a member of Starfleet Intelligence? How did she become Worf’s handler? This all feels like it would benefit from either a mini-series or a feature-length Short Trek
